500g Flour
60g Fresh Yeast
150g Sugar
150g Butter
250ml Milk
½ Teaspoon Salt
a little Lemon
a little Vanilla Extract
1-2 Eggs (the dough can’t be too soft)
1.Warm milk slowly over stove
2.Add yeast to warm milk
3.Sift flour
4.Add 150g flour to milk with yeast
5.Mix with mixer on slow setting
6.Wait 15-20 minutes to let the mix rise
7.Add all other ingredients, except eggs, to the remaining flour and mix together
8.Add this mix to the milk/yeast mix (which has risen by now)
9.Slowly mix for 15 minutes until it is uniformly smooth and then add eggs
10.Wait another 15-20 minutes to let the mixture rise again
11.Roll onto baking pan (thin – not too thick)
12.Allow to rise again for 15 minutes
13.Add plums
14.Bake at 230ºC - 240ºC (450ºF - 475ºF) until crust is browning / not too long
