1 large head of cauliflower
2 teaspoons butter
1/4 teaspoon salt.
Sauce ingredients:
1 10 3/4 ounce can cheddar cheese soup
6 ounces cream cheese
3 jalepenos,diced, and seeds removed or not as desired. The heat is in the veins and seeds
1/4 cup fresh cilantro
1 tablespoon fresh squeezed lime juice
1/2 teaspoon cumin
2 teaspoons chili powder
1 tablespoons minced garlic from jar
1/4 tresspoon salt
Topping:
1/4 cup Bar B Que Fritos Corn Chips, crushed.
Cook your cauliflower until tender crisp
Toss with the 2 teaspoons butter in salt, cover and keep warm.
Meanwhile make sauce:
In a large sauce pan combine the cheddar cheese soup, cream cheese, and garlic, cook on low stirring constantly until cream cheese melts.
Add all the rest of the sauce ingredients and cook just for a few minutes to get the flavors to marry.
Put the cauliflower in a pretty bowl,
sprinkle the crushed doritoes over.
This cheesy sauce would be delish on a rock. Any veggie will be eaten if you put this on it. Broccoli is another good choice, as are brussles sprouts.
