* 4 carrots, peeled
* 1/3 cup salted peanuts
* 2 Tbl red wine vinegar
* 2 Tbl peanut oil
* Drizzle of sesame oil
1. Coarsely chop the carrots. I threw them in the cuisinart and pulsed several times.
2. Combine carrots with the rest of the ingredients and toss

This is such an interesting recipe. I never had carrots and salted nuts together in the same dish. Got to give it a try!
