Bone Suckin' Bacon Wrapped Fingerlings

Ingredients:
Bacon Fingerlings:
Bone Suckin’ Poultry Seasoning and Rub, 2 Tbsp.
Fingerling Potatoes, 1 lb. washed (approximately 20-25)
Olive Oil, 2 Tbsp.
Bacon, 12 oz., thick cut
Sea Salt and Pepper to taste
Dip:
Bone Suckin’ Habanero Sauce, 2 tsp. (or more if you love it spicy)
Sour Cream, 1 cup

Preheat oven to 400˚
Bacon Fingerlings:
Place potatoes in a resealable bag; pour in olive oil, Bone Suckin’ Poultry Seasoning & Rub, salt and pepper. Close bag and shake to coat potatoes thoroughly.
Put potatoes on a parchment paper lined baking sheet and bake at 400˚ for only 15 minutes.
set aside to cool.
Cut bacon in the middle, widthwise. Wrap each potato in a half slice of bacon and secure with a toothpick. Place back onto baking sheet. Bake potatoes at 400˚, wrapped in bacon for 15 minutes on each side. Salt and pepper the potatoes to taste.
Dip:
Mix sour cream with Bone Suckin’ Habanero Sauce in a small bowl. How easy is that! Serves 10-12.
