1 kabocha ~ about 1 1/2 lbs.
remove seeds
1 1/4 cup water
5 Tbsp. brown sugar
2 Tbsp. soy sauce
Cut kabocha into about 1 and 1/2 inch slices or cubes.
Peel kabocha skin around the edges.
Add water, sugar, soy sauce, and the kabocha in a large pot.
Bring to a boil.
Reduce the heat to low.
Cover with a lid.
Simmer the kabocha for about 18 minutes or until the tender but not mushy.
Makes 6 servings as a side dish. Great with rice & fish.
You can also cook the Kabocha in water than make the sauce separate and pour sauce when the kaocha cooked and cool.
If you over cook the pumpkin, you can scoop it from the skin and make a mash pumpkin ( like mash potatoes) still very flavorful.
Save the Pumpkin seeds :
I clean the pumpkin seeds in salted water than roast in the oven until dried at a low temperture.
Makes a great snack.
