Amella Caramel Apples
Ingredients for 1 caramel apple (*This recipe can be scaled up):
1) 8 Amella Caramels
2) 1 Granny Smith Apple, medium
Equipment needed:
1) Double Boiler, or substitute a Sauce Pan & Steel Bowl
2) Wooden Popsicle Sticks
3) Rubber Spatula
4) Baking Sheet
5) Parchment Paper
Recommended Products
Preparation:
1) In a heavy sauce pan, bring water to a boil. Once it is boiling, reduce the heat to low.
2) In the steel bowl, place 8 Amella Caramels.
3) To create a double boiler, place this steel bowl on top of the heavy sauce pan.
Note: Make sure that the bottom of the steel bowl does not come in contact with the water, or the caramels will scorch.
4) With the rubber spatula, gently stir the caramels for about 8 minutes until melted and smooth.
Note: Separation of cocoa butter from the Amella caramel is normal. Just keep stirring!
5) Once smooth, remove the bowl from atop the saucepan and allow to cool for about 5 minutes.
6) While waiting for the caramel to cool, insert wooden popsicle sticks into apple.
7) Using the rubber spatula, evenly spread the caramel over the apple. When done, place the apple on a baking sheet lined with parchment paper.
8) Place the caramel apple(s) in the refrigerator for about 30 minutes before serving to allow the caramel to set up. Enjoy!

The Amella Caramels are already flavored, so you don't really need to dip the caramel apple into any toppings. But if you're a fan of layers of texture, my vote is for freshly toasted nuts!
