2 ripe, Fresh Hass Avocados, seeded and peeled
1 orange, juiced
1 lb. pork roast or tenderloin, trimmed of fat
2 cloves garlic, crushed
1/2 tsp. paprika
1 tsp. seasoned salt
1/4 tsp. pepper
1 Tbsp. canola oil
1 small red onion, peeled and diced
2 cups cherry or grape tomatoes, sliced in half
1 jalapeño pepper, seeded and minced, optional
8 flour tortillas, warmed
1) Cut half the avocado into ½-inch cubes.
2) Place in a shallow bowl and pour orange juice over the avocado cubes.
3) Slice remaining avocado; reserve.
4) Cut pork in strips about 1-inch by ½-inch.
5) Make a paste with the garlic, paprika, seasoned salt and pepper.
6) Rub paste all over pork strips.
7) Heat oil in a large skillet over medium-high heat.
8) Add pork and stir fry for two minutes, stirring frequently.
9) Add half of the diced onion and the jalapeño pepper to the skillet.
10) Cook and stir for two minutes.
11) Add half of the sliced tomatoes and cook for one more minute or until the pork is cooked through and the tomatoes are warm.
12) Gently stir in the diced avocado and juice.
13) Serve the fajitas with flour tortillas and garnish with the remaining onions, tomatoes and sliced avocado.
