4 slices (1/4" thick) fresh pineapple, sliced
1 Tbsp butter
2 Tbsp brown sugar
2 Tbsp dark rum
1 tsp vanilla extract
2 cups vanilla ice cream
2 Tbsp shredded sweetened coconut, toasted
1) Heat a grill, grill pan, or large saute pan over medium heat (adding a small pat of butter if using a saute pan).
2) Cook the pineapple rings for 3 to 4 minutes per side, until caramelized all over.
3) Combine the butter, brown sugar, rum, and vanilla in a saucepan and cook over low heat, stirring occassionally until the sugar fully melts and the sauce is a uniform dark brown.
4) Keep it warm.
5) Divide the pineapple among four bowls.
6) Top each with a scoop of ice cream, a bit of rum sauce, and toasted coconut.
