Tomato Spinach Roll
1 sheet puff pastry
4 medium size roma tomatoes, diced
2 cups spinach, chopped
1 cup mozzarella cheese
2 tablespoon dried italian herbs, or mixture of dried oregano, basil, rosemary etc
1 egg
2 tablespoon olive oil
salt and pepper
1) Preheat oven to 350F.
2) Mix diced tomatoes and chopped spinach in a bowl. Add olive oil, dried herbs, salt and pepper and mix well.
3) Line baking sheet with parchment paper. Roll out puff pastry on parchment paper.
4) Spread tomato and spinach mixture on the entire puff pastry, but not too close to the edges.
5) Sprinkle mozzarella cheese on top.
6) Start rolling the pastry from the bottom to top. You may need to lift the parchment paper to help you start rolling.
6) Beat egg and brush egg on rolled pastry to give it a nice golden color when baked.
7) Bake in oven for 20 mins.

Outstanding! I alter recipe a bit since I ran out of mozzarella cheese. So I used cheddar instead. It still tasted great and got nice compliments from everyone.

This is great....but I feel that some hot spicy Italian sausage and or some Pancetta needs to be added...just saying! But I like the flavors for a meatless dish!
This recipe looks so yummy!! I've cooked for years, but not used puff pastry...I don't understand how you cut it....the picture is a triangle. If you roll the puff pastry, wouldn't it be like a log and the cut piece be round?
This is a great recipe, I use pizza dough to make calzone. I love the ricotta and mozzarella and provolone combo. We are cheese lovers and love tomatoes and spinach. This is a taste of heaven. I use fresh italian herbs only as the flavor enhances so much better.
