    Artichokes artichoke bottoms






  • Ingredients


    5-6 Artichoke bottoms
    1- 1/2 cup sweet peas
    1 Potato
    1 Carrot
    1 Onion (all medium size)
    2 cups of water
    1/3 cups of olive oil
    1 lemon juice
    1 tsp sugar
    Fresh dill
    Salt to taste





    Directions



    Peel and cube the carrot, onion and potato. Saute them in the olive oil for about 4 minutes. Mix with the sweet peas. Take/dry out the Artichoke bottoms from water, place them in a shallow pan drizzle with lemon juice, sugar and salt. place all the vegetable mix on the artichokes bottoms. Add two cups of water,(try to do it from the sides) Cover the pan cook about 15-20 min low to medium heat until about all the vegetables cooked.
    Let the dish cool down garnish with dill.





    Chef's Note & Story

    I usually use canned artichoke bottoms, but if you like to use fresh ones this is how to prepare your own artichoke bottoms;
    Peel outer leaves of the artichoke until you reach the pale green, soft part. Slice off the stem. Using a heavy sharp knife, cut away the top 3/4 of the artichoke, reserving the bottom. Trim off the hard edges with a small paring knife. Use a spoon to scrape out any remaining inner choke. Place the cleaned artichoke in a bowl of water with 1/3 of the lemon juice. keep them in the water till the vegetable mix is ready.
