Bread (dry, broken) 4 lbs

Onions (dry, finely chopped) 1 lb, 4 oz
Bell Pepper (finely chopped) 8 oz
Celery (finely chopped) 1 lb
Shortening (melted) 8 oz
Ground Beef 30 lbs
Eggs (whole, beaten) 12
Salt 9 T
Black Pepper 2 T
Moisten dry, broken bread with water, press out and discard excess water, set aside
Saute vegetable in shortening until lightly browned
Combine moistened bread, sautéed vegetables, beef, eggs, salt and pepper. Mix lightly, but thoroughly (do not over mix)
Shape into 5 lb loaves, place 4 loaves crossways on each 18x26 pan
Bake at 325 for 1 hour (remove excess fat and liquid during cooking if so desire)
