2 ripe avocados
juice of 1 lemon
1 fat garlic clove, crushed
salt and black pepper
1 tbsp olive oil
12 oz of dried pasta, preferably tagliatelle ( you can try with other kind of pasta as well )
Scoop out the flesh of the two avocados, which should be perfectly ripe, deep yellow and unblemished - into the bowl which you will serve the pasta with.
Mash to a cream. Add the lemon juice and mash again. Add the crushed garlic and stir in. Add the seasoning to taste, followed by the olive oil and mash thoroughly to a creamy sauce.
Cook the pasta in plenty of boiling water, When it is nearly cooked, add a tablespoon or so of the pasta cooking water to the sauce and mix in thoroughly. When the pasta is cooked, it should be tender but still slightly firm, drain it well. Tip it on top of the sauce and toss very thoroughly to combine before serving.
You can use more or less lemon juice, garlic or olive oil according to family taste.
