Boneless Pork Roast
1 pound Bacon
1/2 pound prosciutto
1/2 pound sliced provolone cheese
fresh spinach leaves
fresh rosemary
salt, to taste
pepper, to taste
make a pocket in your pork roast
rub with olive oil
season the roast with salt and pepper
stuff the pocket with your spinach, prosciutto, and provolone
season top of the roast with fresh rosemary
lay bacon strips across the top of the roast
bake at 450 degrees for 15 minutes and then lower heat to 350 degrees. Cook until internal temperature reaches 150, usually about 20 minutes per pound.
