Oven Fried Parmesan Chicken

3 pounds chicken pieces, combination of 2 legs, 2 thighs, 2 breasts
1 cup olive oil
1 garlic clove, minced
1 cup fresh panko bread crumbs
1/3 cup grated Parmesan
2 tablespoons chopped parsley, oregano and/or tarragon
2 teaspoons paprika
1 tsp red chili flakes (optional)
Salt and pepper
Recommended Products
1) Preheat oven to 350 degrees F.
2) Heat olive oil on stove. When warm, toss in the minced garlic and red chili flakes. Remove from heat. Let the oil mixture sit for 10 mins, let the garlic and red chili flakes infuse the oil.
3) In a shallow dish, combine panko bread crumbs, chopped herbs, paprika, parmesan, salt and pepper.
4) Coat each piece of chicken in garlic-chili oil mixture, then dredge it in the bread crumb mixture. Make sure all sides is coated well. Then place on roasting pan.
5) Repeat above step for the remaining chicken.
6) Drizzle any remaining garlic-chili olive oil over coated chicken. Bake in oven for 1 hour or until coating is golden brown and chicken meat slides off a fork.
