One bunch fresh beets with stems/leaves (4-6 beets)
2 TBL extra virgin olive oil
2 TBL butter
2 TBL fresh finely chopped thyme, basil, parsley
¼ tsp red pepper flakes
What you do…
Wash beets/stems/leaves well in lots of water removing all sand and dirt. Chop off stems with leaves. Bunch up and cut these into small pieces and chop the leaves into thin strips. Peel beets and slice about ¼” thickness.
Over medium heat in skillet heat EVOO and melt butter. Place sliced beets in and cook about 10-15 turning a couple of times with tongs. Reduce heat to medium low. Add the chopped stems and leaves tossing with tongs and coating with EVOO. Add finely chopped herbs, salt/pepper to taste and red pepper flakes. Cover with lid and allow to steam cook for about another 15 minutes tossing once or twice.
Serve with your favorite meat. Serve warm or cold!

It's adventurous to try veggies that are not the 'most popular' like beets, rutabagas, turnips, etc. It doesn't take much to make these wonderous culinary delights absolutely divine and delicious. So with just some EVOO, a few fresh herbs, and your favorite seasonings like salt, pepper, red pepper flakes, etc., you have created for yourself a heavenly healthy meal!
