3 cups flour
2/3 cups cream or 1/2 & 1/2
2 teaspoon baking powder
3 tablespoons sugar
1/4 teaspoon salt
3 tablespoons cold butter
1 teaspoon pure vanilla extract
1 large egg
1 cup dry cranberries, or currants
In a large bowl, mix all dry ingredients together.
Add the egg, vanilla and cream. Add cranberries or currants,
Do not over mix. Work with your hands. Do not use a mixer or beater.
On a clean working surface, flour the counter surface and pat the dough into a round form.
Cut into 8 triangle pieces, as if cutting a pie.
Brush cream on top of the cut scones before you bake, it will give the scones a golden color glaze.
Line a baking sheet with parchment paper
( optional) or just grease the baking sheet.
Place at an inch apart. Bake for about 15 minutes or until golden brown. at 375 degrees. Makes 8 scones.
Great with Homemade jam and butter.
Bake and serve.
Takes 25 minutes to make: Mix 10 minutes 15 minutes baking.. well worth it.
