450 ml 3/4 pint vegetable stock
125g or 4 oz firm tofu, cubed
1 large carrot, very thinly sliced
2 spring onions, chopped
white part of 1 small leek, thinly sliced
1 tbsp organic tamari sauce or dark soy sauce
black pepper
small bunch fresh coriander, chopped
Heat the stock in a heavy-based saucepan and add all the remaining ingredients, except the coriander. Bring to the boil, reduce the heat, cover the pan and simmer for about 10mins, or until all the vegetables are tender.
Serve the broth immediately, sprinkled with the freshly chopped coriander.
Tamari sauce,a Japanese variety of soy sauce is available from health food stores.
