1 cup stewed rhubarb and juice
1 cup fresh or frozen strawberries
1 cup apple juice
8 tablespoons plain soy yogurt
1/2 teaspoon cinnamon (optional)
to make stewed rhubarb:
1 cup rhubarb pieces
2 tablespoons sugar
1/4 – 1/2 cup water
1. To make the stewed rhubarb, place all in a small saucepan and cook until the rhubarb is soft.
2. For the smoothie, combine all the ingredients in a blender and pulse until smooth.
This is also nice using ginger instead of the cinnamon.
