¼ C Coconut Curry (Starport Foods 123)
2 C. Chicken broth
3 oz. Bay shrimp
3 oz. Scallops
3 med. Fresh Shittake mushrooms, thinly sliced
2 oz. Bean threads, dried (made of mung bean and tapioca starch) or rice noodles
2 tsp. Green onions, chopped for garnish
1. Soak bean threads or rice noodles in warm water about 10 minutes or until softened. Drain and set aside.
2. Slice mushrooms.
3. Rinse and drain shrimp and scallops and set aside.
4. Chop green onions and set aside.
5. Place 2 C. of broth and ¼ C. of Starport Foods Coconut Curry in a deep pan and bring to a boil at medium heat.
6. Put the shrimp, scallops, mushrooms and bean threads in broth, and boil for 2 minutes or until noodles are softened and done.
7. Pour soup in a large bowl, and garnish with green onions.
Simple and quick recipe great for as a starter for a cold day.
