2 pounds chicken wings (24 pieces)
1 10-ounce jar blackberry jam or jelly
3 tablespoons lime juice
Zest of ½ lime
2 tablespoons olive oil
1 teaspoon red pepper flakes
8 ounces feta cheese, crumbled
In a blender, combine jam, lime juice, zest, olive oil and red pepper.
Whirl until smooth.
Pour mixture into 1 gallon resealable bag.
Add chicken wings, seal and shake to coat evenly.
Refrigerate and marinate at least 30 minutes or up to 24 hours.
Turn occasionally to coat.
Preheat oven to 400 degrees F.
Line a large sheet pan with heavy-duty aluminum foil.
Place wings in single layer on foil. Bake for 40 minutes.
Sprinkle with feta cheese.
Let stand 5 minutes, then serve.
