  • Ingredients


    4 Pork Loin Steaks
    2 tablespoons Blackberry Jam
    Half bunch of Broccoli
    15-20 Cherry Tomatoes
    4 tablespoons Panko Crumbs
    4 tablespoons Parmesan Cheese
    For Sauce
    4 tablespoons Blackberry Jam
    4 tablespoons Butter
    4 teaspoons Balsamic Vinegar
    4 tablespoons Milk





    Directions


    1.Cut broccoli into small pieces and heat them in a microwave for 30 seconds. Cut cherry tomatoes into half. Cut each pork steak into half.
    2.Preheat the oven to 390 degrees F.
    3.On 4 pork steaks, sprinkle salt and pepper, spread blackberry jam, put cut broccoli and tomatoes and sprinkle panko crumbs and parmesan cheese. Then place one pork steak on each. Place them on the lightly greased baking dish and bake for 20-23 minutes.
    4.In the mean time, make sauce. In a bowl, combine blackberry jam, balsamic vinegar, butter and milk. Heat in a microwave for 30-45 seconds.
    5.When pork is cooked, place on the plate and pour the blackberry jam sauce.

    This is like sandwiches. Well balanced main dish. Jam makes pork more tender and brings out rich flavor. Enjoy the fruity sauce as well.
