1 (16-ounce) bag frozen peaches, thawed
1 cups sugar
1/2 cup water
Flute glass
1 bottle of champagne, Prosecco or other sparkling wine, chilled
Peach liquor or peach snapps (1 oz per glass)
Orange peel twist, fresh strawberries or mint for garnish (optional)
1) Stir the sugar and water in a saucepan till the sugar dissolves. Let it cool completely.
2) Puree peaches with 1/2 of cup of sugar syrup in blender till smooth. Strain the mixture through a fine-meshed strainer.
2) Take one flute glass and fill 1/3 of it with the strained peach puree.
3) Add 1 oz of peach liquor or peach snapps.
4) Give it a stir with a metal spoon.
5) Tilt the glass and slowly fill it with champagne or sparkling wine. Let the bubble rise to the top. Leave about a finger of space at the top.
6) Gently stir the glass with a metal spoon to create a nice bubbly foam at the top of the glass.
7) Garnish with orange peel twist, fresh strawberries or mint before serving.
