Try baking it in parchment paper in the oven. To prepare, cut salmon into individual portions, then for each: salt and pepper to taste; add two or three lemon rind strips (avoid the pith); sprinkling of dill / fennel leaves / parsley or whatever green herb you like. Add olive oil. Wrap in parchment paper, twisting each end like a party favor so steam stays in. Bake in over 10-15 min at 350-375 depending on how rare you like your salmon. Best with meyer lemons, if avail.
