Almond Oven Fried Fish

1/4 cup all purpose flour
1 egg
1/4 cup lowfat milk
1 cup cracker crumbs
1/2 cup sliced almonds, chopped
4 fish fillets, about 6 oz. each
2 Tbsps. unsalted butter
1/4 cup vegetable oil
1 Tbsp. plus 1 tsp. vegetable oil
1 lemon, cut in wedges
1) Preheat oven to temperature 450°F.
2) Combine flour and pepper to taste in a
shallow dish.
3) Combine egg and milk in a shallow bowl.
4) Combine cracker crumbs and almonds in a
shallow dish.
5) Coat fillets with flour, dip in egg
mixture, then coat with almond mixture,
pressing lightly.
6) Combine butter and oil in a baking pan.
7) Heat pan in oven 5-7 minutes until oil
is sizzling.
8) Add fish and turn to coat with oil.
9) Bake 8-10 minutes until golden brown.
10)Drain on paper towels and serve with
lemon wedges.

Chef's Note & Story
Actually cooking time will depend on the thickness of the fish pieces. I rotated the tray after ten minutes, and after 15 minutes I started pressing with my finger to see if the fish felt firm.
Adding Almonds on fish fillet's something new.. I've got to try this:-)
