Sweet Maple-cider Glazed Carrots

1 large package baby carrots
1 cup apple sauce
1 tsp cinnamon
2 tsp dijon
1/2 cup maple syrup
1 1/2 cup pecan halves
2 Tbsp butter
1 1/2 tbsp granulated sugar
1 tsp cinnamon
Recommended Products
1. Preheat oven to 350 degrees.
2. Coat an 8x8 glass baking dish with nonstick spray.
3. Cook carrots in medium pot with water until almost tender. Don't overcook. Strain carrots and put into baking dish. Set aside.
4. In a small sauce pan, cook applesauce, cinnamon, dijon, and maple syrup for about 10 minutes on medium heat until mixture bubbles. Pour sauce over carrots evenly. Stir to coat.
5. Make the pecan topping by first melting butter over low heat in small pan. Add sugar and stir until it dissolves, and then add pecans. Turn the pecans over several times to coat with buttery sugar mix. Remove from heat.
6. Place pecan mix on top of carrots and bake at 350 degrees for 20 minutes. Carrots should be golden and perfectly glazed when pulled out of the oven. Enjoy! :)

Chef's Note & Story
I recently discovered my love of cooked carrots when I went to Cracker Barrel and tried them there, so I finally decided to create a recipe of my own. The maple syrup and applesauce pair together wonderfully. The pecans on top were inspired by a cookie recipe that I recently made, which used sugared walnuts in the dough. Enjoy!
