Ingredients
6 wooden skewers
12 large basil leaves
1 pint cherry tomatoes
16 bocconcini (small mozzarella balls)
1 clove garlic, chopped
a pinch of salt & pepper
1/8 tsp red pepper flakes
1/4 cup olive oil
1/8 cup balsamic vinegar
1/2 tsp dried Italian herbs
Directions
1) In a large bowl, combine garlic, salt, pepper, red pepper flakes, olive oil, balsamic vinegar and Italian herbs. Use a whisk to mix well.
2) Then add bocconcini to the bowl. Mix well with the vinegar mixture. Cover and refrigerate for at least 1 hour.
3) When ready to assemble the skewers, remove bocconcini from the refrigerator. Add tomatoes into the mixing bow and toss well with vinegar mixture. First, wrap a bocconcini with a basil leave. Put it into skewer. Then add cherry tomato. Repeat again with wrapped bocconcini and then followed by a cherry tomato. Repeat again if you prefer to have your skewer to have another set of wrapped bocconcini and cherry tomato.
4) Repeat steps for remaining skewers. Serve immediately or wrap and put in fridge till ready to serve. Save the vinegar and oil as a dipping sauce for the skewers or bread.
