Spicy Pork Delight Over Rice

1 cup of quick cooking rice
2 cups of water
5 scallions
1 clove of garlic
1 can of Rotel tomatoes & Green Chilies
1 can of Campbells cream of mushroom soup
2 boneless pork chops
3 TBSP Olive Oil
1/4 cup vegetable oil
4 TBSP sour cream
Prepare rice according to directions on package... Keep rice hot.
Fry pork chops in vegetable oil over medium heat until done.
Drain pork chops on paper towels and set aside to cool somewhat.
Chop 3 onions set aside
Chop 2 onions set aside (optional)
Mince garlic set aside
In medium saucepan saute the 3 chopped onions & Garlic in olive oil until translucent.
Add soup (undiluted) and Rotel to the onion mixture. Whisk or stir until blended.
Allow soup mixture to simmer on lowest setting for about 5 minutes stirring several times.
Once pork chops are cool remove any fat with a knife and discard.
Tear or cut pork chops into bite sized pieces and fold into the soup mixture.
Serve soup mixture over hot rice with a Tablespoon of sour cream (optional)
Sprinkle with the 2 chopped onions (optional)
