1 cup chocolate chips
3 tablepoons light corn syrup
1/2 cup rum
2 1/2 cups crushed vanilla wafers
1/2 cup powdered sugar, plus more to roll cookies in
1 cup chopped nuts
Melt chocolate chips over hot water, add rum and corn syrup, stir to combine.
Combine vanilla wafers, 1/2 cup powdered sugar and nuts, add to rum mixture.
Let stand at room temperature for half an hour.
Shape into 1 inch balls, roll in confectioners sugar and store in fridge for at least 2 days before serving.
I like to put mine in a zip lock bag, but any container that has a tight fitting lid will work.
