Rocky Sunrise Bacon And Egg Burger

1 pound ground chuck
1/2 pound ground sirloin
5 slices bacon, fried, drained, reserve bacon fat
7 eggs, one to go into burgers, reserve rest for topping
5 scallions, thinly sliced, green parts too
1 ounce packet Ranch Dip mix
3/4 cup Italian style bread crumbs
1/2 teaspoons ground black pepper
8 Ounces Smoked Rombol cheese (mega marts usually have in gourmet cheese section)
TOPPINGS:
6 crusty rolls I like kaiser rolls
6 tablespoons mayo
6 slices onion
6 slices lettuce

Fry bacon til crispy, drain on paper towels, reserve bacon fat for later.
Mix together the chuck, sirloin, crumbled bacon, one egg, bread crumbs scallions, ranch dressing, and pepper. Make 6 patties.
Grill to med rare.
The last 5 minutes of cooking, I toast the buns, put a piece of Smoked Rombol on top of burgers to melt, and fry the eggs soft set in the yolks.
Serve with your choice of toppings
