12 large shrimp, at least 21 to 25 count, or larger
12 very thin slices of prosciutto
12 teaspoons cream cheese
12 thin slices melon
6 tablespoons freshly squeezed lime juice, divided
Tropical salsa:
1 cup mango, diced
1/2 cup papaya, diced
1/2 cup sweet red bell pepper, diced
1/2 cup red onion, diced
3 tablespoons fresh cilantro, chopped
Either buy the shrimp cooked, peeled and cleaned, or do it yourself.
Marinate the shrimp in 3 tablespoons of lime juice for at least one hour.
Make your tropical salsa the morning of your party to give the flavors a chance to marry. Just combine all the salsa ingredients using the remaining tablespoons of lime juice.
ASSEMBLY:
Put one slice of prosciutto down.
Place a thin slice of melon in the middle.
Place a shrimp on top of the melon.
Place a teaspoon of cream cheese on the shrimp.
Bring both ends over to cover your beautiful package!

You can easily double, triple or however many of these you want.
If you don't have fresh mangos and papayas, don't fret, use the ones in glass jars in your fresh fruit and vegetable section in your grocery store.
