Hardy Rustic Vegetable Soup~ Very Easy To Make And Healthy

3 boxes ( or cans ) vegetable broth
4 cut turnips
6 small golden potatoes
2 slices celery stalks
4 cut up carrots
1 diced whole onion
3 cut up squash ( green)
3 cut up yellow squash
6 corn on the cob if not fresh frozen )
1/4 teaspoon chili flakes ( add more if you like it spicy )
1/4 teaspoon thyme ( if you do not have fresh )
1/4 dried parsley
1/4 teaspoon oregano
sea salt & fresh ground pepper to taste
Fresh cilantro for ganish
In a pot add olive oil and onion cook until onions are translucent, than add your broth and spices.
Clean & cut the vegetables .
add the diced turnips,carrots & potatoes first.
After 20 minutes add the squash, celery & corn. ( you do not want these vegetables to get mushy
When done garnish with fresh cilantro. Add more spices according to taste.

Wow, this is real healthy. I usually add in tomatoes into vegetable soups with corn. Good contrast!
