4 medium potatoes, sliced, keep skins on
4 slices bacon, fried, and crumbled,save bacon fat
1/2 cup onions, chopped
1 cup corned beef or pastrami, chopped, deli is ok
1 /2 cups swiss cheese, grated
1/2 teaspoon each salt and pepper
Toppings:
4 to 6 tablespoons pickled jalepenos
1 tomato diced
sour cream
Fry bacon til crisp, drain on paper towels, reserve the fat.
Fry the potatoes in bacon fat until tender and crisp, season with salt and pepper.
Line a pie pan with the potatoes
Saute the onions in the fat, sprinkle over the potatoes.
Put corned beef on potatoes, leaving a rim of potatoes around the outside.
Bake in a pre heated 350 degree oven for 20 minutes, or until hot, sprinkle the swiss cheese over corned beef, return to oven and bake until bubbly and cheese is melted.
Top with your choice of toppings.
