Needhams
3/4 cup of mashed potato - mashed with butter
8 ounces of coconut
2 tsp of vanilla
3lbs of confectioners sugar
2 cups of peanutbutter
6 ounces of unsweetened chocolate
12 ounces of semisweet chocolate
candy wax
In one bowl, using a hand blender, slowly mix together the warm mashed potato with 2lbs of confectioners sugar and the 8 ounces of coconut and 2 tsp of vanilla.
Divide potato mixture in half
In another bowl blend the peanut butter and 1lb confenctioners sugar together.
Spread half of the potato mixture on a buttered pan or on wax paper.
On top of the potatoe mixture, spread a thin layer the peanut butter mixture.
Spread the remaining potatoe mixture on top of the previous two layers.
Chill until set.
In a double boiler, melt chocolates and wax.
Take the candy and cut into small squares and dip into the chocolate.
Once all squares are dipped, chill until hardened and serve.

Chef's Note & Story
This is "Maine's Favorite" candy. I grew up with my grandmother and mother making the basic candy during every Christmas holiday. As an adult I have continued the tradition of making this candy every year during the holiday season. This year I got an idea to add a peanut butter mixture to it and it was very well received from friends and family. It is simple but time consuming; however is well worth the effort.
