Nuts About Pumpkin Pie
Filling:
1 15 oz can organic pumpkin
2 medium ultra ripe organic, fair trade bananas
2 whole cage free eggs
12oz. almond or organic soy milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon real sea salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
Crust:
2-3 cups Nuts About Granola Plain Jane granola
Recommended Products
To make the crust, place the granola in a microwave save dish and heat for a minute or two until the mixture becomes soft. mold the soften granola into a pie pan and bake for 10 minutes at 350 degrees.Let cool to room temperature.
Filling:
Mash the bananas with a fork. Combine the rest of the ingredients and blend until smooth. Pour the mixture into the cooled pie crust. Bake in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.

Inspired by LIBBY'S Famous Pumpkin Pie recipe turned healthy.
I made this for the first time for Thanksgiving dinner and was so impressed, as was my family. I felt bad because my Mom always makes the pumpkin pie and since I made this, I'm getting requests to make it again this year! It was also very easy.
I love Pumpkin pie and it reminds me of Thanksgiving as it is my family's traditional Thanksgiving dessert.
