For a one layer cake. Double the recipe for a two layer cake.
Set oven at 350 Baking 30 minutes
1 1/4 cups flour
1 cup sugar
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 1/2 tsp vanilla extract
1/3 cup canola oil
1 tsp distilled apple cider vinegar ( optional ) white vinegar is OK
Chocolate Glaze
1/3 cup sugar or powder sugar
4 tbsp margarine
2 tbsp soy milk or almond milk
2 1/2 tbsp unsweetened cocoa powder
2 tsp vanilla extract
Directions for Cake
Mix all ingredients in order. Whisk until no lumps. The mixture will be watery.
Pour into a baking pan. Bake for about 30 minutes or check with a toothpick, if it comes out clean, the cake is done.
Direction for Chocolate Glaze
In a sauce pan at medium heat add & bring to a boil
sugar, margarine, milk, and cocoa.
Continually stirring the mixture until it comes to a boil, than reduce the heat.
When it starts to boil reduce the heat and continue stirring for another 2 minutes.
Remove from heat ADD the vanilla, mix well. Pour chocolate mixture over the cake.
I punch holes in the cake with a bamboo stick so that the chocolate glaze can seep into the cake,.

The chocolate glaze topping will cool fast so select a topping if any.
