Lemon Cupcakes With Buttercream Frosting

Cupcake
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
1 1/4 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup milk
lemon extract drops
zest of one lemon

Lemon Buttercream Frosting Ingredients

4 cups confectioners' sugar ( white powder sugar )
1/2 cup butter, softened
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
2 tablespoons milk
2 drops of yellow food coloring

Preheat oven to 350 degrees
Add paper cupcake to muffin pans.

Mix together the flour, baking powder and salt in a bowl, Set aside.

In another bowl, cream butter & sugar until fluffy. Beat in the eggs one at a time, then add in the vanilla.
Combine the flour mixture, adding 1 cup milk.
Add lemon zest and lemon extract.
Pour batter into prepared cupcake pan.

Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center a cupcake comes out clean.

Allow to cool completely before adding frosting.

Direction for Buttercream Frosting:

In large mixing bowl add the powder sugar and
butter. Mix until fluffy adding the
lemon juice until smooth. Mix in milk, and increase speed and continue to beat until light and fluffy.

Frost cupcakes when cakes are completely cool.
