Jason's Pumpkin Squares
1/8 tsp.Vanilla
3 eggs, slightly beaten
1 large can Pumpkin
1 cup sugar
2 tsp. Pumpkin Pie Spice
1/4 tsp. Cinnamon
1 can - 13 oz. Evaporated Milk
1 box Yellow Cake Mix
2 sticks Margarine, melted
2 cups Chopped Nuts (optional)
Mix first seven ingredients.
Pour into 9" x 13" pan.
Sprinkle cake mix over batter.
Pour in melted margarine.
Sprinkle with nuts.
Bake at 350 degrees for 1 to 1 1/2 hours (or until knife inserted in center comes out clean.)
If you want to reduce calorie (or "guilt") per serving, you can use fat-free evaporated milk.
