Waldorf Salad With Pineapple Dressing

5 cups unpeeled diced apples (use 2 colors for more colorfull salad)
1 cup diced celery
1/2 cup chopped walnuts
1/2 cup raisins
1/2 teaspoon lemon juice
Dressing:
1 1/2 cups pineapple juice
2 tablespoons cornstarch
2 tablespoons sugar
Make dressing earlier in the day to allow it to chill.
In a sauce pan put all dressing ingredients and bring to a boil, stir until it comes to a boil and thickens, this will take just a few minutes.
Cover and chill for at least one hour.
Wash, core and dice apples. I always use a Granny Smith and a red apple for color.
Put apples in a large bowl.
Dice celery, chop walnuts, add them to apples.
Add raisins. lemon juice, toss salad well.
Add dressing and mix well to combine
everything.
Let stand for a few minutes before serving

Chef's Note & Story
Any tart crisp apple can be used. i usually avoid a cooking apple or any apple that is mealy in texture. Always use a Granny Smith and then another apple with a crisp texture
