Cheesy Ramen Noodle Tacos

1 - Brick of Ramen Noodles uncooked and Seasoning Packet

1 - Teaspoon of Olive Oil

1/2 - 1 Cup of Shredded Cheese Preferably Colby Jack, Cheddar or Pepper Jack

1 - 5 Tortillas (Soft Taco size; medium size)
Any Flavor (white, wheat, low-fat, flavored)

Cook ramen noodles in a small saucepan as directed on the package. Cook until they are "Al Dente" (still firm; we don't want mushy noodles here). About 2 minutes give or take.

Remove from heat and pour all but 1/2 cup of water out of the pan. Pour in the seasonings from the packet and stir well. (Let it sit for a minute or two).

Get out a plate or two and add some cheese to the tortillas and microwave for about 15 - 20 seconds to allow the cheese to melt.

Go back to the saucepan stir once more and drain out the rest of the water. Drizzle on 1/2 teaspoon of olive oil and stir again. Then take the noodles and place them in the tortillas on top of the cheese.

Chef's Note & Story

Variations: While the noodles are cooking, add in leftover veggies and small bits of meat if you want it to be a bit healthier and heartier. I really love adding some cooked edamame, and chopped water chestnuts to this with a drizzle of sesame oil instead of the olive oil. You can play with this recipe and create endless combinations. Sour Cream thinned with a dash of A-1 steak sauce is SO good on this too! Last tip: Wrap the tacos in a folded paper towel (see photo)... kids totally dig this and so do the grown-ups. Towel keeps hands cleaner and the taco stays together better! Enjoy!
