Twice-baked Mashed Potatoes

Mash Potatoes
------------
3/4 cup of sour cream
1/4 cup of heavy cream
pepper to taste
1/4 stick of butter
6-8 medium size potatoes
Other Ingredients

1/2 cup chopped onion
1/2 cup chopped green pepper
1 tablespoon vegetable oil
1 cup shredded Cheddar cheese, divided
1/4 cup crumbled cooked bacon
1 teaspoon salt
1/2 teaspoon pepper
Recommended Products
1) Add whole potatoes to pot and fill with water, till it covers all potatoes. Boil potatoes till tender. Test with fork. It should be easy to insert fork.
2) When cooked, remove from heat. Let it cool. When it's cool enough, cut each potatoes into half. Scoop out the flesh and put into a large mixing bowl. Keep the skin of potatoes. They are needed for stuffing later.
3) Add all mash potato ingredients to mixing bowl and mash well.
4) In a small skillet, saute onion and green pepper in oil until tender. In a large bowl, combine the onion mixture, mashed potatoes, 1/2 cup cheese, bacon, salt and pepper.
5) Spoon into potato skins from earlier. Sprinkle with remaining cheese. Bake, uncovered, at 350 degrees F for 15-20 minutes or until cheese is melted.

Can I add something on this wonderful recipe...for people on the go, you can bake the potatoes in the microwave, 10 minutes on high heat for 2 potatoes, 15 minutes for 4 potatoes. The skins of microwave baked potatoes aren't nearly as crispy, so you may want to rub a little olive oil on them and finish them in a conventional oven at 400°F for 10 minutes.
