Real Hot Chocolate Tofu Cheesecake

24 chocolate crème stuffed cookies, crushed (about 2 cups)
1/4 cup butter, melted

8 ounces firm tofu
½ cup ricotta cheese
4 ounces cream cheese
1/4 tsp. chipotle powder
4oz Semi-Sweet Chocolate baking squares, melted,
¼ cup rum
2 extra large eggs

Preheat oven to 325ºF.
Combine cookie crumbs and butter.
Press in the bottom of 8x8-inch foil-lined pan. Bake 10 min.
Beat tofu, ricotta, cream cheese, and chipotle powder until well blended.
Mix in chocolate and rum.
Slowly add eggs on low speed.
Pour mixture into pan.
Bake cheesecake for 45 minutes or until center is almost set.
Cool completely and then refrigerate overnight.
