Counter-intuitive Cookies
2 eggs
1 cup sugar
1 tsp vanilla
1/4 - 1/2 tsp almond extract (or your fave)
1 cup chopped nuts - your choice, I prefer pecans and slivered almonds
1 cup shredded coconut (unsweetened)
1 cup chopped dried fruit (apricots, currants, dates, craisins etc.)
2 tbsp sugar for rolling
1 - In a large bowl, beat the eggs, then add the sugar and beat until fluffy.
2 - Add the vanilla, almond extract and dump in all the fruit and nuts. Stir.
3 - Dump the whole mess into a lightly greased 9x9 glass pan and put it into a 350F oven for 20 minutes.
4 - Take the "cake" out of the oven and immediately stir it thoroughly with a wooden spoon until you have a pan of crumbs.
5 - After about 5 minutes, the doughy crumbs will be cool enough to work. Form the dough into little balls and roll them around in the sugar. Enjoy!
