Bruschette With "ammoglio" Sauce
Sliced bread (fresh and crusty)
Garlic
Olive Oil
Fresh Mint leaves
Fresh Basil leaves
Dried Oregano
Whole Tomatoes
Salt
"Ammoglio" (pronounce kind of "ahm-mohl-lyoh") Sauce:
- Boil some water and then toss the tomatoes in it for just half a minute, then drain them.
- Cut with a knife the surface of the tomatoes and peel the boiled skin off. Believe me, it's more easy than it sounds.
- Chop the pealed tomatoes.
- In a mixer add garlic, a bit of olive oil, the leaves, salt and a bit of oregano. Quantities vary according to your taste, basil and garlic should be very abundant. Mix.
- Add the mix to the chopped tomatoes.
Bruschette:
- Grill the bread, it should be burned less than a toast, but again adjust to you taste.
- Serve them hot with a lot of the sauce on the top and enjoy.
