Potato & Salame Strata

INGREDIENTS
4-5 cups (total) of potatoes, very thinly sliced
4 eggs, beaten
1 package of Brie cheese, or other cheese you prefer (chopped into flat slices)
1 cup of ricotta
1 ½ cups of very thinly sliced salame or pepperoni
1 cup of Bisquick mix
½ cup of vegetable oil
½ cup of Pecorino Romano grated cheese
3 tablespoons of onion, (grated with a cheese grater into a slush consistency)
1 teaspoon of garlic, (grated with a zester )
½ teaspoon of sea salt
¼ teaspoon of fresh cracked pepper
1 tablespoons of rosemary, chopped

PREPARATION
Preheat oven to 375 degrees. Combine all the ingredients in a very large bowl, reserving enough potatoes to line the springform pan. Line a springform pan with sliced potatoes tossed in olive oil. Bake for about 1 ½ hours. Keep covered with foil the first hour, then remove foil to brown. The top should become a nice golden brown. Ovens vary, so just keep checking.

Chef's Note & Story
This is a bake once, eat twice dish. It's delicious hot out of the oven, and even better the next day! Just slice a wedge and crisp the sides up in a skillet with a little olive oil. Serve with a little dollop of sour cream or horseradish cream. Yum. Yum. Yum!
