Chicken Cutlets

250gm Chicken Brest Fillet
1 large finely chopped onion
1 1/2 tbsp finely chopped ginger
2 finely chopped green chilies
1/2 tsp pepper powder (can add little more if required)
finely chopped cilantro leaves
Salt to taste
Bread crumbs
2 eggs, beaten well
1 large boiled potato ,mash and keep aside

Cook chicken with some salt. Shred it and keep aside.
Fry the onions till light brown. Add the ginger, green chilies and curry leaves and fry for 30 sec.
Add salt and fry for a while.
Add mashed potato and mix well. Now you can add chicken and mix.
Make oval shape cutlets with the chicken mix.
Heat oil in a deep frying pan.
Take cutlet one by one, dip in egg, and then dip in the bread crumbs. Bread all the cutlets same way. Deep fry the cutlets and place on paper towel. Sever hot.
