Sausage Spinach Pasta Soup

2 pounds sweet Italian sausage, casings removed
1 cup chopped onion
2 (28 oz) cans stewed tomatoes, chopped
3 1/2 cups beef broth
2 cups water
1/4 pound salami, cut into strips
2 1/2 cups rotini/corkscrew pasta
2 cups spinach
1 tablespoon olive oil
Recommended Products
1) In a large pot, heat olive oil. Then cook onion, scrambled sausage and salami. Cook for about 5 mins till onion is transparent.
2) Stir in beef broth, water and tomatoes. Bring to boil, then cover and simmer for 15 minutes.
3) Add uncooked pasta into pot. Cook for another 15 mins till pasta is cooked.
4) When ready to serve, toss in spinach. Spinach cooks really fast, simply toss into warmed soup is enough to cook the spinach.
