Cheesecake Salame

Cheesecake
----------
8 oz. Philadelphia Cream Cheese
1 cup sugar
3/4 cup of milk
3 eggs
3 cups of sour cream
1/2 oz. fresh ginger
2 oz. lime zest
1/2 oz. candied ginger

Chocolate Spray
--------------
8 oz. dark chocolate
8 oz. cocoa butter
1 1/2 oz. red food coloring

Chocolate Sauce
-------------
3 oz. sugar
2 oz. water
1 oz. cocoa powder (Valrohna)

Rice Crispies
----------
2/3 cup rice crispies
2 1/4 cup chocolate
1/2 cup salami finely diced
1 tsp. crushed black pepper

Salame Chip
----------
Salami
Isomalt

Cheesecake

With the paddle attachment, mix the cream cheese and sugar on first speed then add milk, eggs, sour cream, ginger and lime. Fill the flexipan ¾ high with mixture and bake over water bath on sheet pan in oven at 325 degrees Fahrenheit. Bake for 45 minutes or until firm, then freeze. Once the cheesecake has been baked and frozen please see the directions for the rice crispies.*

Chocolate Spray

Melt chocolate and cocoa butter over water bath and add the red food coloring. Boil the three ingredients together for one minute. With a spray gun, spray the frozen cheesecake.

Chocolate Sauce
-------------
Boil the three ingredients for one minute.

Rice Crispies
-----------
Melt chocolate and add the rice crispies, salame, and pepper to the mixture. *Once the cheesecake has been baked and frozen please place the rice crispie mixture to the top of it and freeze.

Salame Chip
-----------
Take a finely sliced piece of salame and cover both sides of it with a little bit of Isomalt between two silicon mats. Bake them in the oven at 325 degrees Fahrenheit for about 20 minutes or until crisp.
