Thai Fish Cakes
1 lb minced or chopped white fish
1 egg
1/2 cup string beans, sliced fine
3 tbsp. fresh lime zest
1 tbsp. of red curry paste
1 tsp. sugar
1 tsp. salt
3 cups vegetable oil
Cucumber Relish Ingredients -
1 cup diced cucumber
1/2 cup ground roasted peanuts
1/2 cup sugar
1/2 cup white vinegar
1. Put everything, except the oil, in a large bowl
and knead it with your hands until you can make
sticky little balls with it.
2. Use about 2 tbsp of it, and make a bunch of
small patties about 3" in diameter.
3. Deep fry in the vegetable oil until they are
light brown.
4. Serve with cucumber relish.
Cucumber Relish Directions -
1. Mix sugar and vinegar in the pot and heat.
2. When the mixture comes to the boil, take it off
of the heat and let it cool.
3. Put it into a cup, add diced cucumber and top
with ground peanuts.

The best fish cakes I tried so far. The one I had in China don't have vegies in them. So it's just fish and something they add to make them crispy. Thanks!

Thai Fish Cakes are common street food in Thailand, I like the flavorful taste compared to most Western fish cake recipes. These aren't battered, which allows for more of the fresh taste of the fish, spices, and herbs to come through.
