Capenelli Pasta (Angel Hair Pasta ) With Garlic & Tomatoes

Bag of Capellini pasta
Olive Oil
4 roma tomatoes
3 cloves of garlic
1/3 cup white wine or 1/2 cup chicken broth.
red dried chile flakes
bunch of fresh basil or fresh spinach leaves( for those who do not like basil
fresh cilantro for Garnish ( optional)
sprinkle or slice parmigiano reggiano cheese
Boil water in a large pot for the pasta. Do not add the pasta until the tomatoes mixture is done,
Chop the tomatoes, diced the garlic.
At a low heat add olive oil in a skillet combine tomatoes & garlic. Do not burn the garlic.
Add 1/3 cup of white wine ( opional) or chicken broth
cook until tomatoes are soft but not mushy.
Add the chile flakes.
Cook the pasta in boil water for 2 1/2 minutes. Do not over cook. add the pasta to the tomatoes mixture.
Turn the heat off. Toss fresh basil or fresh spinach leaves. Hot pasta will cook the leaves.
Garnish with cilantro sprinkle or thinly slice parmigiano reggiano cheese
