3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
1/2 cup Chopped Walnuts (optional)
Mix all ingredients together, one at a time, starting with the first & ending with the last. Mix until smooth. Add walnuts if your using them.
Bake in a 350 degree oven for 1 hour or until top is dark brown & knife inserted in center comes out clean. Cool on wrack for at least 1/2 an hour & slice.
Serve with butter or cream cheese.
Makes a good snack on a cool fall afternoon.
